&lt;p&gt;Ingredients:&lt;br/&gt;
1 eggs&lt;br/&gt;
1 can cream style corn&lt;br/&gt;
1 can kernel corn&lt;br/&gt;
1/2 cup sour cream&lt;br/&gt;
1 box Jiffy Corn Muffin Mix&lt;br/&gt;
Salt &amp; pepper to taste&lt;br/&gt;
2 Tbsp Butter (I use Marg.)&lt;/p&gt;

&lt;p&gt;Use butter to coat a glass or ceramic loaf pan.  (Do not use metal, as it will burn the edges.)  Combine all other ingredients and pour into casserole with melted butter. (Do not mix.) Bake at 350 degrees until knife comes out relatively clean. &lt;p&gt;In a large bowl, toss together the corn, tomatoes, onion, basil, oil, vinegar, salt and pepper. 1 cup coarse ground cornmeal &lt;br/&gt;
4 ounces unsalted butter &lt;br/&gt;
8 ounces dark brown sugar, approximately 1 cup &lt;br/&gt;
6 slices canned pineapple in heavy syrup &lt;br/&gt;
6 maraschino cherries &lt;br/&gt;
1/3 cup chopped pecans, toasted &lt;br/&gt;
3 tablespoons juice from canned pineapple &lt;br/&gt;
3 whole eggs &lt;br/&gt;
4 3/4 ounces all-purpose flour, approximately 1 cup &lt;br/&gt;
2 teaspoons baking powder &lt;br/&gt;
1/2 teaspoon salt &lt;br/&gt;
5 3/4 ounces sugar, approximately 3/4 cup &lt;br/&gt;
1/2 cup canola oil&lt;/p&gt;

&lt;p&gt;Preheat oven to 350 degrees F.&lt;br/&gt;
In a microwave-proof dish, bring the milk to a boil. Remove the milk from the microwave and add the cornmeal. Stir and let soak at room temperature for 30 minutes. Set aside.&lt;/p&gt;

&lt;p&gt;Melt the butter in a 10-inch cast iron skillet over medium heat. Once the butter has melted, add the brown sugar and stir until the sugar dissolves, about 5 minutes. Remove the skillet from the heat and carefully place 1 slice of pineapple in the center of the pan. Place the other 5 slices around the center slice in a circle. Place the cherries in the centers of the pineapple slices and sprinkle the nuts evenly over the fruit. Drizzle pineapple juice over top.&lt;/p&gt;

&lt;p&gt;Sift the flour, baking powder, and salt into a medium mixing bowl and whisk to combine. &lt;/p&gt;

&lt;p&gt;In a separate mixing bowl, whisk the eggs. Add the sugar to the eggs and whisk to combine. Add the canola oil and whisk. Add the cornmeal and milk mixture to the egg mixture and whisk to combine. Add this to the flour and stir just until combined. Pour the batter over the fruit in the skillet and bake for 40 to 45 minutes. Remove from oven and let cool for 30 minutes in the skillet. Set a platter on top of the skillet and carefully invert the cake. Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking. Remove bananas from pan to a serving dish. Bring sauce to a simmer and carefully add the rum. If the sauce is very hot, the alcohol will flame on its own. If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes. If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency. &lt;p&gt;Tasty to be sure, especially if you put the sauce on the chicken while grilling.  I’m not too crazy about the texture/color of the sauce though.  It could probably be better if strained before the mangoes were added, as to get the pepper skins out of the sauce.  Likewise, &lt;a href="http://lancaster.unl.edu/food/ciq-mango.htm"&gt;peeling the mangoes&lt;/a&gt; could help too.  I also added a little BBQ-Sauce from the bottle to give the sauce a little smokiness.  Liquid smoke (&lt;a href="http://www.barbecuenews.com/forum/topic.asp?ARCHIVE=true&amp;TOPIC_ID=3427"&gt;homemade of course&lt;/a&gt;) could help with that, but I didn’t have any.&lt;/p&gt;

&lt;p&gt;2 tablespoons olive oil &lt;br/&gt;1 onion, diced (about 1 cup) &lt;br/&gt;1 red pepper, diced (about 1 cup) &lt;br/&gt;3 cloves garlic, coarsely chopped &lt;br/&gt;1 teaspoon salt &lt;br/&gt;Freshly ground black pepper &lt;br/&gt;1/2 teaspoon ground allspice &lt;br/&gt;1/3 cup red wine vinegar &lt;br/&gt;3 tablespoons molasses &lt;br/&gt;2 tablespoons Worcestershire sauce &lt;br/&gt;2 tablespoons lime juice &lt;br/&gt;1/4 cup low-sodium tomato sauce &lt;br/&gt;1 mango, diced (about 1 1/2 cups) &lt;br/&gt;2 to 3 jalapenos, minced &lt;br/&gt;2 boneless, skinless chicken breasts (about 3/4 pound each)Heat the oil in a medium-sized skillet over medium-high. Add the onions and cook until translucent, about 2 minutes. Add the red peppers, garlic, salt and pepper, and allspice and cook for 2 minutes more. Stir in the vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce and cook for 1 minute more. Transfer the mixture into a bender and add the mango and jalapeno. 2 cups all-purpose flour &lt;br/&gt;
2 teaspoons kosher salt, plus additional for seasoning&lt;br/&gt;
Preheat the oil in a heavy 5-quart pot over medium-high heat to 375 degrees F.&lt;br/&gt;
Slice the leeks into 1/2-inch wide rings, separating them 2 layers at a time.&lt;/p&gt;

&lt;p&gt;In a medium mixing bowl, whisk together the milk and the egg. In another medium mixing bowl, combine the flour and salt. Divide the flour into 2 separate, shallow dishes and place the milk and egg mixture in a third. Going 1 small handful at a time, dip the rings first into the first flour mixture, then into the milk and egg, and then into the second flour mixture. Working in batches, fry the rings for 1 to 1 1/2 minutes, or until golden brown. Remove the rings to a cooling rack set inside a half sheet pan and allow to drain for 2 to 3 minutes before serving. &lt;li&gt;Dissolve the salt in the water. Heat the water to almost boiling.&lt;/li&gt;
&lt;li&gt;Create a well (indentation) in the flour. Slowly add the water while stirring with a fork.&lt;/li&gt;
&lt;li&gt;Continue stirring with the fork until you can’t mix it anymore.&lt;/li&gt;
&lt;li&gt;Now take off all jewelry and start mixing/kneading the dough with your hands.&lt;/li&gt;
&lt;li&gt;Keep kneading until all of the flour is mixed in. The dough should be slightly sticky but not hard. You can add slightly more water or flour if needed.&lt;/li&gt;
&lt;li&gt;Now take a rolling pin and pull off a small portion of the dough (about the size of a golf ball).&lt;/li&gt;
&lt;li&gt;Place it on the counter where you have sprinkled flour. Roll it out until it is as thin as you can make it.&lt;/li&gt;
&lt;li&gt;Place the rolled tortilla on a hot griddle (without grease) and cook on one side until you see it bubble.&lt;/li&gt;
&lt;li&gt;Now flip to the other side and cook for a few seconds.&lt;/li&gt;
&lt;li&gt;Continue in this manner until all your dough is cooked.&lt;/li&gt;
